Mr. Illy substituted the compressed air being used by other products and used steam. Mr. Illy also figured out a packaging system for the coffee that used inert gases rather than pressurized air then he could sell his coffee all over Italy.
Illy found the best coffee by blending 9 Arabica coffees spanning 4 continents. There has been over 8 decade of coffee biology that goes into today's Illy coffee. The family has passed these techniques down and they have developed equipment to bring you the freshest product possible.
Today Illy sells it coffee in over 135 countries and employees over 800 people. The coffee is hand picked not bought green off the market. Illy goes directly to the source and works closely to ensure the product is the same with batch.
