I recently had this brilliant idea to make my usual boring sauteed chicken more fun. It takes no extra time and uses pretty basic ingredients and was delicious! I started with a simple marinade :: 2 lemons or limes - whichever you have in the fridge. Juice them and place in Pyrex pan. Add about 3 tbs olive oil - you want to mix it and have it like a dressing. Not too thick, not too runny. Then add salt, pepper, dried oregano and parsley. Mix until combined then add chicken breasts. I pound my chicken in a empty Cheerios bag - then cut open bag, salt and pepper chicken and add to mixture to marinade about 20-30 minutes. If you don't have that much time - it's fine - it's just going to be more flavorful the longer it "soaks". Add olive oil to pan over medium heat and add chicken and cook each side about 12-15 minutes. I turn it over a few times and even cut one piece in half to be totally sure its done. Enjoy with a salad or steamed veggies.
