Easy Weekday Dinner :: Turkey Vegetable Soup

 
Now that the days are getting shorter and cooler, nothing is better than soup for dinner! This is my famous "whatever-is-in-the-refrigerator" soup. I think I got the recipe from my mom years ago. I've made it twice in the last week because we ate it so fast. The ingredient list goes like  this :: 1 lb ground turkey, 2 TBS olive oil, water and broth, lots of cup up veggies, salt and pepper. Heat oil in a dutch oven, add ground turkey and cook until no longer pink. Add water and broth. I just add water and then add "Better Than Bouillon" chicken base for soups. You could also use a beef stock. You add as much water as you want and then adjust salt and bouillon to taste. Once the stock tastes good add all your veggies and bring to a gentle boil. Cook until veggies are just fork tender and brightly colored then turn off heat and cover pot. It is very easy to overcook this, and then you'll end up with really mushy and colorless vegetables. The veggies I like to use are as follows :: carrots, cauliflower, broccoli, green cabbage (don't use red - will color the whole soup pink!) green beans, celery - you get the point. Really anything you have on hand! Eat with pasta, rice, quinoa or just as is. You could add beans if you like too. Healthy, filling and yummy!
