I can't tell you how many times someone, upon seeing the kale in my grocery cart, asks me, "How do you cook that?" Kale always appears in those "Top 10 Foods You Should Be Eating" list as it is nutrient dense: filled with vitamin C, pro-vitamin A and vitamin K as well as a lot of protein for a leafy green, iron, folate and vitamin B6. Although kale looks unruly and complex to cook, it isn't. You can stir fry it, steam it or bake it. It can be added to soups and multi-food stir-frys too. You want to cook it as little as you can and still be able to eat it. I like to simply stir fry it in a little olive oil sprinkled with salt. Some people remove the stems, but I don't think it's worth the effort. Just eat it - it's more crunch! You want to be sure to rinse the kale well before cooking and just drain well. The water that clings to it helps it to cook!
