Same drill: dice the potatoes into bite-sized potatoes (I leave the skin on), then spread into one or two baking sheets, lined with foil or parchment paper for easy cleanup. Drizzle olive oil and salt/pepper and toss to coat. High heat -- 400-425 degrees -- for 20-30 minutes. Open the oven halfway through the cooking time and toss them around a bit.
Should be a bit golden brown by the end. I think you can estimate one medium potato diced will feed one adult or two kids.
